Cake For A Memorial Day Crowd

This weekend is Memorial Day, and I imagine many of us will be headed to the beach or to the backyard for some quality time in the sun to kick off summer! It’s a wonderful opportunity to bring the family together. When planning for such an event its important, for your sanity and energy, to find easy recipes to satisfy a crowd that can fit in one pan. One of my favorite recipes, that is sure to thrill the grandchildren, is a Chocolate Coca-Cola Cake!

When we were kids Mom bought a six-pack of Cokes on grocery day, it was the biggest treat to have a tall cool glass of Coke! We savored every sip and those six bottles would last us all weekend long. I think its funny how times have changed, now it is common practice for a soft drink to be enjoyed daily. Once a delightful treat for special days is now a form of caffeine to get you through the day.

Coke is also a great ingredient for cooking. For Memorial Day make this delicious cake for your family and friends. They will love it!

Chocolate Coca-Cola Cake
 
Makes about 12 Servings
Ingredients
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup butter
  • 1 cup Coca-Cola®
  • ½ cup whole buttermilk
  • ¼ cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Coca-Cola® Frosting (recipe follows)
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking pan with nonstick baking spray with flour.
  2. In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt.
  3. In a medium saucepan, combine butter, Coca-Cola®, buttermilk, and cocoa. Bring to a boil over medium-high heat, whisking constantly. Remove from heat, and add to flour mixture, whisking until smooth. Add eggs and vanilla, whisking until smooth. Spoon batter into prepared pan; bake for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Pour Coca-Cola® Frosting over hot cake. Let cool for 30 minutes before serving.
Coca-Cola Frosting
 
Makes about 2 cups
Ingredients
  • ½ cup butter
  • ½ cup Coca-Cola®
  • ¼ cup unsweetened cocoa powder
  • 4 cups confectioners’ sugar
  • 1 cup chopped pecans
Instructions
  1. In a medium saucepan, bring butter, Coca-Cola®, and cocoa to a boil over medium heat, whisking constantly. Remove from heat, and gradually add confectioners’ sugar, whisking until smooth. Stir in pecans.

  2. Made the cake this morning for hubbys birthday, it came out wonderful… I have a natural gas oven and it took the full 35 minutes to bake, it’s cooling right now I love that I can pour the frosting right on it. I’m sure it will be so yummy, thank you for the easy recipe.

  3. Oh my! I don’t remember cooking with Coca-Cola in the north where I live, but I certainly know about the soft drink, My Grandmother had a small neighborhood candy store and sold plenty of it. As a child my consumption of the beverage was very limited. This was true for candy as well. My favorite Mary Janes sold 2 for a penny! Yes, when I was allowed, I had to pay for my purchase. Wow! Those were really “the good old days”!

  4. Soda,was supposed to be a treat that’s the way my mom did it too same with chips. My daughter, has it a couple of times a year and my son, goodness you would think it was water. But this sounds wonderful maybe I’ll make this in loo of a pudding pie??? !!! Have a safe a blessed weekend …

    Yes, Cokes were a special treat in my childhood household, also. Usually Mother bought them when we were expecting company – certainly were not an everyday drink.
    I remember as a senior in high school there were a number of Coke parties during the Spring to celebrate our graduation – fritos, bean dip and Coke were always the basis of the menu!

  7. As little children we only got Coke as a rare treat, and then a little bit poured on ice and watered down! I think folks a long time ago thought it really did have cocaine or something “bad for children” in it. My father was convinced drinking a lot of sodas would give a person diabetes, and it has turned out that he was not as peculiar as people thought. But real Coke is and always will be the gold standard for a hot summer’s day in the Deep South. I do remember this cake, and I think I might have to make one this weekend. Thanks for the memory!

  8. I am a very rare person, one who does not like chocolate! But, I have had this cake before, my mom made it. And, I actually liked it! I know it sounds strange but I do enjoy an occasional piece of milk chocolate but anything more ” chocolatey” than that, I usually pass on! The Coca-Cola and cinnamon flavors make this cake special!

  10. Oh my- this brings back such good Memories!! When my Children were young ,in the Summer for Picnics – I used to make similar to this- only it was called ” a Cherry Coke Cake”. If not made from scratch, I would make it ,using a chocolate Cake mix, less water and add a can of Wilderness Cherry Pie Filling to the Batter.-Bake the cake , Frost it with much the same as this. It was so good and always such a hit! I would leave the cake in the same baking Pan as it is quite moist .~~ With Children who are now grown and with a Granddaughter, I had forgotten all about this. ~ am for sure going to pass this recipe along to them. They live in another State. I just know it will be a wonderful memory too for my Son and I bet he makes it for my Granddaughter too!! ~Thanks for this recipe!

  11. My mom drank one glass bottle a day. She poured it in a glass with ice. There was always a swig or two left in the bottle that she used to let me have. I lived for that moment and savored every drop. That was back before soda (we say pop in Ohio!) had high fructose corn syrup in it. It tasted so good and was much more refreshing than most of today’s sodas!!
