This weekend is Memorial Day, and I imagine many of us will be headed to the beach or to the backyard for some quality time in the sun to kick off summer! It’s a wonderful opportunity to bring the family together. When planning for such an event its important, for your sanity and energy, to find easy recipes to satisfy a crowd that can fit in one pan. One of my favorite recipes, that is sure to thrill the grandchildren, is a Chocolate Coca-Cola Cake!
When we were kids Mom bought a six-pack of Cokes on grocery day, it was the biggest treat to have a tall cool glass of Coke! We savored every sip and those six bottles would last us all weekend long. I think its funny how times have changed, now it is common practice for a soft drink to be enjoyed daily. Once a delightful treat for special days is now a form of caffeine to get you through the day.
Coke is also a great ingredient for cooking. For Memorial Day make this delicious cake for your family and friends. They will love it!

- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup butter
- 1 cup Coca-Cola®
- ½ cup whole buttermilk
- ¼ cup unsweetened cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- Coca-Cola® Frosting (recipe follows)
- Preheat oven to 350°. Spray a 13x9-inch baking pan with nonstick baking spray with flour.
- In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt.
- In a medium saucepan, combine butter, Coca-Cola®, buttermilk, and cocoa. Bring to a boil over medium-high heat, whisking constantly. Remove from heat, and add to flour mixture, whisking until smooth. Add eggs and vanilla, whisking until smooth. Spoon batter into prepared pan; bake for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Pour Coca-Cola® Frosting over hot cake. Let cool for 30 minutes before serving.
- ½ cup butter
- ½ cup Coca-Cola®
- ¼ cup unsweetened cocoa powder
- 4 cups confectioners’ sugar
- 1 cup chopped pecans
- In a medium saucepan, bring butter, Coca-Cola®, and cocoa to a boil over medium heat, whisking constantly. Remove from heat, and gradually add confectioners’ sugar, whisking until smooth. Stir in pecans.
